I am not a food-photographer. Not by any stretch of the imagination. I am sure my pictures make that pretty clear, but I felt like a disclaimer might help from deterring viewers. One day I will learn how to take pretty pictures. Today is not that day.
Onto to my delicious recipe.
I had to make a quick run to the grocery store the other day because I had planned a Mommy-Daddy-Poppy movie night and wanted to make some brown-bag-popcorn in which I needed the brown bag and the popcorn. Ha. So while standing in line at the check-out stand I saw this snack mix and it was on sale for $2.00. I had chicken thawed out for dinner and I just put two-and-two together; Snack Mix Chicken. We eat a lot of chicken around our house and sometimes the usual recipes just get boring. And when I say sometimes, I mean they ALWAYS get boring. This seemed like a fun new idea.
When I got home I poured half of the bag into my mini-chopper and ground the snack mix up. I didn’t want it to be really fine as I still wanted a little bit of texture and crunch to the chicken.
I did not season the chicken. I am well aware of the sodium content of this snack so adding more salt didn’t seem like a good idea.
I did the standard flour, egg, snack mix coating dredge. Placed the chicken on parchment paper lined baking sheet and baked at 375 for 30 minutes. I used chicken thighs but you could use chicken breast all the same.
The chicken came out golden, crispy, and super moist inside. It had a great crunchy texture and surprisingly didn’t taste overly-salty; the cheddar flavor did pull through a bit which was yummy.
Is this a very healthy dinner? No. But it is quick, cheap, and yummy, and not that bad. & Sure to please the hubby and kids for an easy weeknight meal. I paired ours with steamed broccoli and cauliflower, both helped to healthy-it-up some!
